La sal de Añana
La época de elaboración de sal varía cada año en función de las condiciones meteorológicas. Comienza generalmente en mayo y termina en septiembre. A partir de este mes las largas noches retrasan el proceso de evaporación y las continuas lluvias estropean la escasa sal que se obtiene.
Durante el resto de los meses los salineros realizan trabajos de recuperación y mantenimiento de las salinas de cara a la temporada de producción. En el módulo de envasado, las envasadoras trabajan todo el año para limpiar, envasar y etiquetar la sal.

En el Valle Salado se producen de forma natural y ecológica cuatro tipos de sal:
Sal mineral de manantial
Cristales de sal de gran pureza gracias al origen y la evaporación natural de la materia prima. La salmuera emerge de filones subterráneos de sal sólida con más de 200 millones de años de antigüedad.
Rica en minerales y oligoelementos, potencia el sabor de todo tipo de alimentos.
Escamas de flor de sal
Láminas de crujiente textura que se forman sobre la superficie de las eras al evaporarse la salmuera. Cosechadas a mano antes de caer al fondo.

Oro líquido que brota de los manantiales. Los salineros la concentran de forma natural hasta alcanzar los 280 gramos de sal por litro.

Fina estalactita de sal, de gran pureza y calidad, formada por el goteo continuo de filtraciones de salmuera en las eras, entramados y canales.
